Our bakery began in the small village of Gamboa, in the jungles outside of Panama City, and was built on a pursuit of craft and our love for feeding those around us.

We take pride in the details of everything we make. Patience and craft are two of the most important ingredients in our bakery. Everything you taste here comes from the hands of hardworking artisan bakers working through the midnight hours to bring you the best.

Our doughs are crafted using artisanal pre-ferments such as sourdough, biga, and poolish. Thanks to long fermentation periods, we achieve enhanced flavor development, superior texture, and easier digestibility. Products may vary each week depending on availability.
